Don't be freaked out by the large amount of garlic and onion--when they get cooked down, they get meltingly sweet! There is no need to get your garlic press dirty, just chop the garlic along with the onion. This recipe is a great way to add more super seasonal healthy leafy greens into your diet (and onto your children's plate as well!) For younger babies, this can easily be pureed with a little bit of extra broth or water to make it a safe baby food.
Sweet & Tangy Collard Greens
1/2 cup olive oil
1 onion, chopped fine
3-4 cloves garlic, chopped
2 bunches collard greens, tough stems removed, washed and cut into 1/2 inch strips
1 cup golden raisins
sea salt and freshly ground pepper to taste
Heat a saucepan large enough to contain the uncooked collards over high heat.
When the pan is hot, add the oil, onions and garlic and saute for 1-2 minutes, until onions just begin to turn golden.
Add the collard greens, raisins and about 1/4 cup of water.
Saute for 5-8 minutes, until collard greens are very soft and raisins begin to soften in the liquid.
Season with salt and pepper to taste.
